Japanese Purin Recipe

Here's a recipe for a Japanese flan called Purin.

We recommend you read the recipe instructions thoroughly before you begin. Be sure to note our recipe tips as well.

Japanese Purin Recipe

Ingredients:

1/2 cup sugar + 2/3 cup sugar
4 large eggs
2 cups milk
1 tablespoon vanilla
2-3 tablespoons hot water + Hot water for the baking pan

Kitchen Tools:

Fry pan or skillet and stirring spoon
Sauce pan
Muffin pan
Mixing bowl and whisk or mixer
Baking pan (large enough to hold the muffin pan)
Small knife and serving plate (larger than the muffin pan)

Time:

About 1 hour to prepare and cook, 1 hour to cool

To prepare the baking pan:

  1. Preheat oven to 325F
  2. Place the fry pan over medium-heat
  3. Take 2 tablespoons of hot water and add it to the fry pan
  4. Pour in 1/2 cup of sugar and stir until it browns to liquid caramel
  5. If needed, add an additional tablespoon of hot water to thin the caramel
  6. Spoon the caramel into the muffin pan molds
  7. Swirl and tilt the pan to coat the sides and bottom with caramel, then set aside

To prepare the mix

  1. Put 4 eggs in a bowl and mix together
  2. In a sauce pan, warm the 2 cups of milk
  3. Add the 2/3 cup sugar and stir until dissolved
  4. Add the teaspoon vanilla
  5. Stir the milk as you add the blended eggs and mix thoroughly
  6. Remove from heat
  7. Use a spoon to scoop out any foam or skin that has formed on top
  8. Pour the mix evenly into the caramel lined muffin pan

To cook:

  1. Place the muffin pan in the baking pan
  2. Carefully pour hot water into the baking pan so it provides a water bath 1/2 way up around the outside of the muffin pan
  3. Place baking dish in the oven
  4. Cook for 40 minutes
  5. To check for readiness, slide a knife in and out near the center, if it comes out clean the flan is done
  6. Remove the pan from the oven

To cool:

  1. Place the pan on a counter to cool for 15 minutes
  2. Then place it in the refrigerator for at least 1 hour

To serve:

  1. Remove the pan from the refrigerator and slide a knife around the inside wall of the muffin mold to loosen the flan from the pan
  2. Place a serving  plate upside down on top of the pan and then flip them over together so the pan is upside-down on top of the plate
  3. Remove the pan and enjoy
