Traditional Mexican Flan Recipe

Here's a recipe for classic Mexican flan.

We recommend you read the recipe instructions thoroughly before you begin. Be sure to note our recipe tips as well.

Ingredients:

1 cup sugar
6 large eggs (3 yolks, 3 whole eggs)
14 ounces sweetened condensed milk
1 cup whole milk
1 cup heavy cream
1 tablespoon vanilla
1 tablespoon cornstarch
Hot water for the baking/roasting pan

Kitchen Tools:

Fry pan or skillet and stirring spoon
2 baking pans (one pie pan and one baking or roasting pan large enough to hold the other)
Blender
Dish towel
Serving plate larger than the pie pan
Small knife

Time:

About 1 hour and 20 minutes to prepare and cook, 4 hours to cool

To prepare the baking pan:

  1. Preheat oven to 325F
  2. Place the fry pan on the stove over medium heat
  3. Pour in 1 cup of sugar and stir until it browns to liquid caramel
  4. Pour the caramel into the smaller baking/pie pan
  5. Swirl and tilt the pan to coat the sides and bottom with caramel, then set aside

To prepare the mix

  1. Crack and separate three eggs, putting the egg yolks in a blender
  2. Add the additional three whole eggs, along with the sweetened condensed milk, cup of whole milk, tablespoon of vanilla, and tablespoon of cornstarch
  3. Blend in the blender until smooth
  4. Add the cup of heavy cream and blend briefly to mix well
  5. Pour the mix into the caramel lined pie pan
  6. Inside the larger baking/roasting pan, place a dish towel at the bottom
  7. Place the pie pan inside over the towel
  8. Carefully pour hot water into the baking pan so it provides a water bath 1/2 way up around the outside of the pie pan

To cook:

  1. Place the baking pan in the oven
  2. Cook for 45-60 minutes
  3. To check for readiness, gently slide the oven rack or tap the pan to determine if the flan is only slightly loose in the center (it will firm when cooling)
  4. Remove the pan from the oven

To cool:

  1. Place the pie pan on a counter to cool for 15 minutes
  2. Then place the it in the refrigerator for at least 4 hours

To serve:

  1. Remove the pie pan from the refrigerator and slide a knife around the inside wall to loosen the flan from the side
  2. Place a plate upside down on top of the pan and then flip them over together so the pan is upside-down on top of the plate
  3. Remove the pan and enjoy
