Spanish Flan de Leche Acarmelado Recipe

Here's a traditional Spanish flan recipe.

We recommend you read the recipe instructions thoroughly before you begin. Be sure to note our recipe tips as well.

Ingredients:

3/4 cup sugar
1/4 teaspoon salt
6 eggs
2 cups milk
1 teaspoon vanilla
Hot water for the larger baking/roasting pan

Kitchen Tools:

Fry pan or skillet and stirring spoon
Two baking pans (one pie pan and one baking/roasting pan large enough to hold the other)
Sauce pan
Mixing bowl
Whisk or Mixer
Fine mesh strainer
Small knife & plate larger than the pie pan

Time:

About 1 hour and 20 minutes to prepare and cook, 1 hour to cool

To prepare the baking pan:

  1. Preheat the oven to 275F
  2. Place the fry pan on the stove over medium heat
  3. Pour in 1/2 the sugar (about 6 tablespoons)
  4. Stir continuously until it turns to a medium brown liquid caramel
  5. Pour the caramel into the pie pan
  6. Swirl and tilt the pie pan to coat the bottom with caramel then set aside

To prepare the mix

  1. Place a sauce pan on the stove over medium heat
  2. Pour in the 2 cups of milk and 1/4 teaspoon of salt
  3. Once it begins to boil, turn off the heat and cover with a lid to keep it warm
  4. In a mixing bowl, put in 6 eggs, the rest of the sugar (about 6 tablespoons) and the teaspoon of vanilla
  5. With a whisk or mixer, stir together until the mix is well blended and foamy
  6. Continue to blend as you pour in the heated milk from the sauce pan

To cook:

  1. Place the pie pan inside the larger baking/roasting pan
  2. Using a mesh strainer, pour the mix into the pie pan while removing any large egg or milk particles
  3. Carefully pour hot water into the baking pan so it provides a 1-2 inch water bath around the outside of the pie pan
  4. Place the baking pan in the oven
  5. Cook for 1 hour
  6. To check for readiness, color should change to light golden yellow
  7. Remove the pan from the oven

To cool:

  1. Place the pie pan on the counter to cool for 15 minutes
  2. Then place it in the refrigerator for at least 1 hour

To serve:

  1. Slide a knife around the inside wall of the pan to loosen the flan from the sides
  2. Place a large plate upside down on top of the pie pan and then flip them both over so the pan is upside-down over of the plate
  3. Remove the pie pan and enjoy
