Costa Rican Flan Recipe

Here's a Costa Rican Flan recipe.

Ingredients:

1-1/4 cups sugar
7 eggs (3 yolks, 4 whole eggs)
1/2 teaspoon of corn starch
1 tablespoon of vanilla
4 cups milk
1 pinch of salt
1 tablespoon water + hot water for the larger baking/roasting pan

Kitchen Tools:

Fry pan or skillet and stirring spoon
Two baking pans, one large enough to hold the other (such as a pie pan and roasting pan)
Sauce pan
Mixing bowl
Whisk or mixer
Aluminum foil
Small knife & large serving plate

Time:

About 1 hour and 30 minutes to prepare and cook, 1 hour to cool

To prepare the baking pan:

  1. Preheat the oven to 350F
  2. Place the fry pan on the stove over medium heat
  3. Pour in a 3/4 cup of sugar
  4. Stir continuously until it turns to a medium brown liquid caramel
  5. Pour the caramel into the pie pan
  6. Swirl and tilt the pan to coat the sides and bottom with caramel, then set aside

To prepare the mix

  1. In a sauce pan on the stove, combine the remaining 1/2 cup sugar, 4 cups milk, pinch of salt and tablespoon of vanilla
  2. Blend well and bring to a boil
  3. Lower the heat to simmer (uncovered) until the mixture is condensed down to about half
  4. Turn off the heat and then cover the pan to keep the contents warm
  5. In a mixing bowl, pour in the 1/2 teaspoon cornstarch and tablespoon of water and mix well
  6. Crack and separate 3 eggs and put the yolks in the bowl
  7. Add the remaining 4 whole eggs and whisk or mix thoroughly
  8. Open the covered sauce pan
  9. Pour the egg mix slowly into the sauce pan while stirring to blend in well
  10. Pour combined mix into the caramel coated pie pan
  11. Cover with aluminum foil

To cook:

  1. Place the pie pan into the baking/roasting pan
  2. Carefully pour hot water into the baking pan so it provides a 1-2 inch water bath around the outside of the pie pan
  3. Place baking pan in the oven
  4. Cook for 35-40 minutes
  5. To check for readiness, lift the foil and slide a knife in and out near the center, if it comes out clean the flan is done
  6. Remove the pan from the oven

To cool:

  1. Place the flan pan on the counter to cool for 15 minutes
  2. Then place it in the refrigerator for at least 45 minutes

To serve:

  1. Slide a knife around the inside wall of the pie pan to loosen the flan from the sides
  2. Place a large plate upside down on top of the baking dish and then flip them both over so the pie pan is upside-down over of the plate
  3. Remove the pie pan and enjoy
