Brazilian Pudim de Leite Condensado Recipe

Here's a traditional Brazilian flan recipe.

With each recipe, we recommend you read the instructions thoroughly  before you begin, and be sure to note our recipe tips as well.

Ingredients:

1 cup of sugar
7 ounces (3/4 cup + 2 tablespoons) milk
4 eggs
14 ounces sweetened condensed milk
Hot water for the baking/roasting pan

Kitchen Tools:

Fry pan or skillet and stirring spoon
Two baking pans, one smaller than the other (such as a pie pan and roasting pan)
Blender
Small knife

Time:

About 1 hour to prepare and cook, 1 hour to cool

To prepare the baking pan:

  1. Preheat oven to 350F
  2. Place the fry pan on the stove over medium heat
  3. Pour in 1 cup of sugar and stir until it browns to liquid caramel
  4. Pour the caramel into the pie pan
  5. Tilt and swirl the dish until the caramel coats the sides and the bottom
  6. Set aside to cool

To prepare the mix:

  1. Crack and separate the eggs for the moment
  2. Place the yolks into a blender
  3. Add 14 ounces of sweetened condensed milk
  4. Blend well
  5. Add 7 ounces of milk and continue to blend thoroughly
  6. Add the egg whites and blend until smooth
  7. Pour the mix into the caramel coated pie pan
  8. Cover with aluminum foil

To cook:

  1. Wet a kitchen towel and place it at the bottom of the larger baking/roasting pan
  2. Place the baking pan on the oven rack
  3. Place the pie pan inside it
  4. Carefully pour hot water into the baking pan so it creates a water bath about 1/2 way up around the outside of the pie pan
  5. Cook for 45 minutes
  6. Lift the foil and place a small knife in and out near the center, when it comes up clean it's done
  7. Carefully remove the baking pan from the oven

To cool:

  1. Take out the pie pan and set it aside to cool for 15 minutes
  2. Then place it in the refrigerator for at least 45 minutes

To serve:

  1. Remove the foil
  2. Slide a knife around the inside wall of the pan to loosen the flan from the dish
  3. Place a large plate upside down covering the pan, then flip the pan and plate over together so the pan is upside-down on top of the plate
  4. Lift the pan and serve
